Chilli Garlic Powder

There are some dishes that have a very distinct flavor and delicious in combination with almost anything, yet simple. This recipe is one of those. It is basically a side dish. Garlic fan's will Love this.

Chilli Garlic Powder
Ingredients
3 Garlic pods
3 Tbsp of Brown Butter or Ghee
About 1 - 1/2 Tsp of Salt
3 Tsp Red Chilli Powder

Method ~
1. Peel garlic and leave hints of garlic skin on a few garlic cloves. The skin imparts flavor to the dish. It's true.



2. Grind the garlic cloves into a fine coarse-ish paste, almost the size of Couscous.



3. Heat Brown butter/ Ghee on a frying pan, add in the Garlic paste, Salt and Red Chilli powder. The fumes can be a little overpowering.





4.Mix well and let it fry on a low flame till it becomes crisp and powdery. Just keep stirring it every 5 - 10 min, making sure that it does not get burnt [that will totally spoil the taste]. You can store it in an airtight container, after it cools down.



One way to use this powder is with some nice hot rice, dal and ghee.



Other ways to use is - you can sprinkle them on your Garlic bread for that extra garlic punch and spice. You can also sprinkle some between Bread and Butter toast. Or, you can eat plain with some hot Rice and Ghee or even as a part of your Pizza toppings. Get creative, try it how ever you want :D
